Sayahna Foundation provides four $T e X$ packages that will help to process documents in Malayalam scripts and various outputs:

PDF — Portable Document Format
ePub — Community supported and open format for eBook Readers
XML — Extensible Markup Language, format used to archive documents for future usage
Responsive HTML — HTML variant that can re-render as per display dimensions
